Anyway, that's where I found this BAAAANGIN recipe for Red Velvet Pancakes. I tracked the yummy picture of RED pancakes to the site ThatsSoYummy.Com! Here's the recipe I used...
(w/ Choc Chips!)
Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons granulated sugar
4 tablespoons unsweetened cocoa powder
2 large eggs
1-1/2 cups buttermilk
1/2 cup sour cream (I used less...)
2 teaspoons red food coloring
4 teaspoons vanilla extract
1/2 cup chocolate chips
Directions:
Combine ALL dry ingredients in a bowl -- flour, baking powder, baking soda, salt, sugar, cocoa powder
Combine ALL wet ingredients in a bowl -- eggs, buttermilk, sour cream, food coloring, vanilla
Add wet & dry ingredients and stir until combined.
Add chocolate chips
(Towards the end my batter was THICK, so I added skim milk to thin it out)
Turn griddle on medium/high, grease with butter or Pam and pour about 1/3 cup size pancakes onto griddle, flip until "browned"
** Also, since my boyfriend is having some weird obsession with strawberries lately, we added fresh cut & washed strawberries on top of our stacks. I swear they don't even need syrup...so sweet!
And soooooooooooooooooooooooooo YUMMY.
P.S. I used red food "gel" so my pancakes didn't turn out as red as I would have liked... So make sure to use true food coloring!!
